  • And so we enter cake week in the “Creative Baking with Christina Tosi”. A few steps in creating this cake, but well worth the effort.  At 6 inches, it may be small, but it’s full of flavor!

  • I’m going to call the pie unit of “Creative Baking with @christinatosi” a success, y’all! I still need to come up with a proper name, but my Wine Country pie was quite yummy! Made with a 2103 @beckmenvineyards Syrah, the Red Wine Chocolate Pudding was complemented perfectly with a Cherry Curd swirl. 

I’ll admit, working out an original pie recipe that incorporated ingredients that don’t typically play nicely together, was a bit daunting. The result was something we’d pay 💰 for at a nice restaurant and be quite happy about. 

Obviously, I need to work on my swirling skills, but I’m stoked that it set up firm enough to pick it up and eat it like a piece of pizza. 🎉🎉

  • I’ve been having fun doing a “Creative Baking with Christina Tosi” this month. My attempt at her #MilkBar pie was a success! Whoo! Hoo! As was my development of a  some yummy pie prototypes along the theme of “winery.”

I used a 2013 @beckmenvineyards Syrah for my red wine chocolate pudding variations. My white wine infused fills included white wine cheesecake, white wine merengue, peach with white wine. For those I used a delicious Grüner Veltliner from @spear_winery. 

All the variations were keepers, but our favorites were red-wine chocolate pudding mixed with chopped cherries on a chocolate wafer crust and slightly mire delectable was similar with a bit of tart cherry powder mixed in the crust and the pudding swirled with cherry curd. On the white side, peach filling swirl led with the merengue on an oat cookie crust was the clear winner. 

It’s hard to decide which one I’ll write the recipe for, they were all so good.

  • There’s nothing like a good quality olive oil on fresh bread. We discovered @laudemioevo on as we explored Florence, Italy a couple of years ago and enjoyed learning about olive oil production and spending time in their tasting room. We just received some of the 2020 harvest and did a quick side-by-side taste test using the last drops of our 2017 stash. 
 
Though hard to see in the picture, the 2017 was a bit darker. Both have the broad, clean, grassy, artichoke aromas characteristic of Laudemio. Where we found subtle difference was in the taste. Both are smooth and savory and rivaled the deliciousness of fresh creamy butter on the bread, but 2020 was slightly less bitter on the finish. I wouldn’t go so far as floral, rather, reminiscent of the freshness of a field shortly after a spring rain. 
 
It’s always fun to smell and taste the subtle differences from year to year. Is it because of rain levels, amount of sunshine, or in the case of 2020, reduced vehicle emissions since we spent the year quarantine? 
 

Whatever brought about the subtle difference, this yummy olive oil brought a smile to my tastebuds and heart.  And a bit of optimism that despite all the difficulties we encountered in 2020 and continue to work through in 2021, there are good things to come.

  • Snow day = Soup day! Pulled out #sourdoughstanley and baked some baguettes to go with a delicious bowl of Kale & Bean soup. Thanks @cooking.in.tuscany for the great cooking class.

  • Fresh snow days are perfect bone broth days! I love making bone broth, but find the part of the process that makes me procrastinate in making it is the straining at the end. Lots of reasons around this, but they mostly boil down to lack of patience. For this batch I tried something new… I wrapped my ingredients in cheesecloth (soup socks and soup bags weren’t available at my local store). And it worked! I was able to grab my makeshift bag, pop it over a normal strainer, and by the time I poured the bulk of the bone broth into containers, the excess broth had strained out. Sorting the remains to pull out bones for a second pass and chicken to be used later today seemed to be easier too. Clean up was most definitely a breeze with this method as well. Do you make bone broth? What do you do to streamline the process?
